Liz,
We always used the None Such condensed mince meat, adding water, brandy and some extra diced apple, then cooking it for about 20 minutes before adding it to the crust. That also makes excellent filled cookies - we use the same dough as we use to make date filled cookies. Those actually remind me a bit of your mini pies.
