I have one of those apple peeler/corer/slicer machines and adore it. I make applesauce year-round and it's delicious. I use combinations of apples, like Granny Smith, Red Delicious, Gala or Fuji, and Braeburn if they're available. That machine makes quick work of the hard part. Yesterday I got permission to let a 9-month-old baby try some for the first time. He adored it; I was so proud. I do about a dozen apples at a time, and the recipe only calls for 1/2 cup of added sugar.
